Acclaimed chef Sion Newton has a wide and varied knowledge of the food experience. Aged 35 and with a commendable history as a pastry chef and head chef behind him, and earning for himself a listing in the Good Food Guide at Cheshire's Frogg Manor, he has now opened his own Gastro Cafe entitled FUDE in Boughton, Chester.

His intention is to fine-tune the British public's eating habits and to promote what he considers to be the most important meal of the day, breakfast. This is a meal Sion has noted that many British people simply omit from their diet. The Fude Breakfast Menu is available throughout the day and offers fresh and healthy locally sourced foods.

On the premises Sion bakes his own cakes and Mediterranean-style breads and pastries. He creates wonderful soups and fillings for his sandwiches and rolls. He has explored the European breakfast and alongside traditional English bacon and eggs serves Italian Eggs Benedict, kippers, poached haddock and fresh mackerel, when in season. The sauces that accompany these dishes are excellent and to be recommended. American pancakes are also available on the menu and two healthy options of milk shakes and smoothies are waiting to be sampled.

Sion is proud to say that both the quality and preparation of his food are of the highest standard. Fude can accommodate 28-30 people at any one sitting and is available for party bookings throughout the summer.


Partnering the Fude gastro cafe is FUDE DIRECT, the outside catering section of the business. Manager, Mark Magragh has a broad background experience of hotel work in both bar management and waiting on and has a fine appreciation of the importance of providing a good service to the public. His manner is warm and welcoming.

The Buffet Menu available through Fude Direct is again created and prepared by Sion Newton and boasts a wide variety of foods and a selection of impressive individual menus offering competitive prices to suit every taste and pocket.

Its wide price range starts from as little as £2.95 per head for Menu A, which provides a choice of filled home-made ciabattas, batches or sandwiches, to the exclusive Finger/Fork Buffet B, costing £22.50 per head, which offers selections of hand-carved cold meats, Italian cured meats, Whole Poached Salmon, Steak and Pepper Brochettes, Smoked Halibut with Capers and Shallots, Meat Loaf, Fude-style Pistachio Sausage Rolls, fresh fruit platters and a wonderful assortment of salads and more. There are Canape Menus offering Smoked Trout En-Croute with Smoked Salmon & Fresh Chives, Mini Beef Wellingtons, Mushroom & Camembert tart, and too Finger/Fork Buffets, Salad Menus, and Hot and Cold Buffets which include preferred choices of curries, Pork with Cider and Mustard and Herb Dumplings, Beef Chilli and Rice, and Naverin of Lamb.

Home-made breads and cheeses are optional extras. But, see for yourself, there is so much more to choose from on every menu. Both Sion and Mark invite you to call in and enjoy the Fude experience.
